Horseradish
(Armoracia rusticana)
Horseradish is very hardy tap-rooted plant in the mustard family. Beautiful glossy foliage, and eventual small white flowers. Once established, roots can be dug to make horseradish sauce. Be sure to dig roots later in the Fall, or early Spring for a more pungent sauce. As long as you leave some of the root crowns behind, you’ll be sure to always have horseradish. When you dig it and break roots, more plants tend to pop up. We tend to plant it on the outside of annual vegetable garden areas. Easy to grow, reliable plant. Plant crowns just under the surface of soil and mulch.
Hardy to zone 3.
Sold as bare root crowns.
